Mongolian Beef | 30 Minutes

Mongolian Beef

Recipe developed by Sara - All Power to the Plants

prep time: 15 minutes // cook time:15 minutes // total time: 30 minutes

3-4 servings

Ingredients:

  • 1 tablespoon avocado oil (or other flavorless oil, divided)

  • 1 pound Homestead Wisconsin sirloin steak (thinly sliced)

  • 2 garlic cloves, minced

  • 1 teaspoon arrowroot powder + 1 tablespoon water

  • Sliced green onion (for garnish)

For the Sauce:

  • ⅓ cup coconut aminos

  • ⅓ cup chicken broth

  • 1.5 tablespoons coconut sugar

  • ¾ teaspoon loosely packed freshly grated ginger 

  • 1 teaspoon honey

  • ¼ teaspoon fish sauce

  • Pinch of red pepper flakes

  • Pinch of salt

Directions:

  1. Add all the sauce ingredients to a small mixing bowl. Stir to combine and place aside.

  2. Heat a large pan over medium heat. Add ½ tablespoon of oil. Cook the steak in batches, being sure not to overcrowd the pan. Place aside. 

  3. In a separate pan, add the remaining ½ tablespoon of oil with the garlic. Sauté for 2-3 minutes, until fragrant, being sure not to burn the garlic. 

  4. Add the sauce and bring to a simmer while stirring. Taste and adjust to your liking.

  5. In a small bowl, add the arrowroot powder and water and whisk until no clumps remain. Stir in the sauce ingredients, stirring constantly, until the sauce thickens.

  6. Add the cooked steak and stir until coated.

  7. Enjoy immediately!

Baked Lamb Meatballs with Garlic Feta Sauce + Mint

Baked Lamb Meatballs with Garlic Feta Sauce + Mint

prep time: 15 minutes // cook time: 30 minutes // total time: 45 minutes

yields 15 medium-sized meatballs

Ingredients:

For the Garlic Feta Sauce: 

  • 4 oz. feta crumbles

  • 1-2 garlic cloves (to taste. for instructions on substituting roasted garlic, see below)*

  • 3 tablespoons plain yogurt

  • ½ tablespoon freshly squeezed lemon juice

  • ½ teaspoon honey

  • Freshly chopped mint (for garnish)

For the Lamb Meatballs:

  • 1 pound Homestead Wisconsin ground lamb

  • ¼ cup blanched almond flour (add 1 additional tablespoon at a time if necessary to bind) 

  • 1 egg (lightly beaten)

  • ½ teaspoon fine sea salt 

  • ¼ teaspoon cumin

  • ¼ teaspoon dried oregano

  • Freshly cracked black pepper (to taste)

Directions:

For the Garlic Feta Sauce:

  1. Add all of the sauce ingredients (besides the mint) to a food processor. Pulse until smooth and creamy. Taste and adjust to your liking.

For the Lamb Meatballs:

  1. Preheat your oven to 375°F. 

  2. Line a baking sheet with parchment paper. Place a wire rack on top and set aside (optional, but prevents sogginess).

  3. Add all meatball ingredients to a large mixing bowl and mix until well combined.

  4. Using a medium sized cookie scoop, make 15 meatballs, and place on the parchment lined wire rack baking sheet.

  5. Bake for 20-30 minutes or until fully cooked.

  6. Serve your meatballs with the garlic feta sauce, garnish with mint, and enjoy!


For the Roasted Garlic (Optional)*:

  1. Preheat your oven to 300°F. 

  2. Cut the top of one small head of garlic so the top of the cloves are visible. Place on a piece of aluminum foil and pour 1 tablespoon of olive oil on top and a sprinkle of salt. Wrap the head of garlic tightly and place on a baking sheet.

  3. Bake for 1 hour 10 minutes. The garlic should be fragrant and slightly browned. 

  4. Once the garlic is cool enough to handle, squeeze the garlic cloves (½ of the head or more) into the food processor.

Wow, I still get goosebumps looking back at our first farm dinner. We were blessed with the most perfect weather and our guests were absolutely the greatest.

When we bought this farm in 2017 all we could talk about is how perfectly it was set up for a night just like this. Bonfire, outdoor dining and great views. This dinner was all of that and so much more.

We want to thank each and every one of our guests that made this evening special. Along with our caterer Brix Cider for helping highlight some of the bounty of our farm, and those of our local friends. Without all of you this night wouldn’t have been the same.

I also want to give a shout-out to Larissa Marie Photography for capturing these memories for us and my sister and brother-in-law for helping make our guest’s experience all that it was.

You’ve read the benefits tied to sleeping on wool, now you’re wondering where to begin with building your bed as a haven for better sleep.

Our wool bedding allows you to sleep more comfortably using a layering technique. Today I am going to share some of these tips with you.

Raw wool mattress pads

Let’s start with what I mean by ‘raw wool’. Our wool mattress pads are raw in the fact they are not covered with a cotton cover like you might be used to. They are left exposed for better cleaning and should be cared for differently when building your bed.

Place our raw wool mattress pads directly on your mattress. Then place a 100% cotton fitted sheet over the top to secure your pad and to keep it from slouching. After that you can put on your 100% cotton sheets as you would normally to make your bed.

Wool Comforters

Unlike our wool mattress pads our wool comforters have a 100% cotton muslin cover on them. You can use them directly but I recommend using a 100% cotton duvet cover to keep them clean and make it easier to wash your bedding.

100% Cotton

As you find sheets and blankets to layer your bedding it is very important to seek out 100% natural cotton linens. Cotton helps your wool breathe, giving you better and more comfortable results. I use Redland Cotton sheets because they are so thoughtfully made and of such high quality.

Homemade Gyros

An easy recipe for ground beef and lamb

Homemade Gyros

These gyros were such a big hit I had to share them with you. They use our 100% grass-fed and grass-finished ground beef and lamb and are savory and utterly delicious.

‘order of events’

You’ll want to start by making the sauce, to make sure it has time to marinate. After that you can start on your meat and once that is in the oven slice and dice your toppings.

Ingredients | for the meat

Pita bread for building your sandwich

  • 1 pound ground lamb

  • 1 pound ground beef

  • 2 tablespoons butter

  • 2 large eggs

  • 1/2 cup milk

  • 2 tablespoons lemon juice

  • 1 cup dried bread crumbs

  • 1 medium onion, finely chopped

  • 6 cloves garlic minced

  • 4 teaspoons kosher salt

  • 2 teaspoons black pepper

  • 2 teaspoons dried oregano

  • 1/2 teaspoon dried rosemary

  • 1 teaspoon dried thyme

  • 2 teaspoons dried cumin

How to |

Preheat your oven to 350 degrees.

Chop, mince and combine all ingredients in a large bowl. Use your hands to knead the ground meat and other ingredients until well combined. After mixing take a 1/2 cup of meat and patty it, place it on a sheet of wax paper or on a greased cookie sheet. Shape the patty into a long sliver, about the same thickness as you would make a burger, using your pita bread as a guide to making the appropriate length; use more meat if necessary. Place all your patty meat on the sheet pan and place it in the oven. Cook 15-20 minutes or until cooked through. I used my broiler function to get a nice ‘crisp’ on the outside after it had been in the oven 15 minutes. Remove from the oven and serve hot.

Ingredients | for the sauce

  • 2 cups plain Greek Yogurt

  • 1 cucumber, diced small

  • 1 teaspoon kosher salt, to get some water out of the cucumbers before combining

  • 1 clove garlic, minced

  • zest from 1 lemon

  • juice from 1 small lemon

  • 2 tablespoons fresh dill

  • 1/2 teaspoon salt

  • 1 tablespoon olive oil

  • black pepper to taste

How to |

Slice your cucumbers length-wise and remove the seeds. Dice them into small chunks and place in a small bowl. Use salt to bring water out of the cucumber, let sit for 15 minutes. Use your hand and squeeze the cucumber over your sink and allow the excess moisture to come out. Combine the cucumber in a large bowl with the other ingredients. Mix well and place covered in your fridge for 30 minutes, longer if you have time. This can be prepared up to 24 hours ahead of time.

Toppings

  • Garden fresh tomato sliced thinly, use two medium tomatoes if serving more than 6 guests

  • 1 small cucumber, sliced thinly

  • 1 medium onion, sliced thinly

Serve

Assemble your toppings on a pita, making sure to cover them with the sauce, this is what really brings out the flavor of your gyros! Enjoy!

Easy Steak Kabobs

Cut a sirloin steak into cubes, or use kabob meat.

  • In a small bowl put a 1/4 cup of soy sauce and place cubes of meat into it, being sure to cover all sides.

  • For a single steak you'll need roughly 4 skewers, take your meat out of the soy sauce and place them on the skewer. If you have any seasonal veggies from the market cube them (peppers, zucchini and onion are our favorites) and add them between your meat.

  • Once you have your skewers prepared it's time to get the grill ready. Turn your gas grill to medium heat, place skewers on the grates and cook for 5-10 minutes on each side, or until veggies are tender. I cook mine on a charcoal grill for the best flavor, cooking them 10-15 minutes per side, or until veggies are tender.

  • Serve 1-2 skewers per person

How do you get tallow?

It will certainly come up in my discussions about tallow, so let’s lay this one out. On our farm we primarily raise livestock for meat. However, I am passionate about utilizing more of our livestock in a responsible and ethical way. So, traditionally the fat from beef and lamb is not saved, but we’ve chosen to change that and render it into a product that is healthy for your skin. With the release of our tallow skincare products, I wanted to share what makes tallow so special. I mean putting beef fat on your skin seems a bit crazy AND logical all at the same time.

What is tallow?

Maybe we should start here. What in the heck is tallow? Tallow is the product produced from fat found in ruminants (buffalo, beef, sheep) which are cooked down and ‘rendered’ into an oil. It is purified through this process making it shelf-stable and nearly odorless. It can be used for cooking like lard (from pigs), or as you see here, can be made into many beneficial skincare and household products.

Utilizing fat from ruminants for skincare goes back as far as history itself. When the use of the whole animal at harvest was standard practice. It is strongly advised that you use this method of cleaning. Why? Wool naturally mats when wet, so if you place it in a washing machine to ‘traditionally clean’ it, your wool bedding will end up with a clumpy and un-usable clump of wool.

How often should you clean your wool bedding?

I recommend leaving your wool comforter or mattress pad out in the sun in the spring and fall (for anyone who has snow covering the ground six months out of the year). But, this really depends on your level of comfort. Honestly, I’m proud if I can remember to do this once a summer. Lucky for me they are naturally odor-resistant.

Midwest Crafted Wool and Leather Goods

This collection is inspired by generations past when quality goods, buying local and responsibly using the whole animal at harvest was the norm. It is ‘Grandpa’s thinking’ that inspires us to utilize the incredible talent that surrounds us to keep more of what is harvested from our animals in our local economy and serving our local community. So, how does this get achieved?

We save our cattle hides at harvest and send them to be processed by a micro-tannery in Iowa. After they are processed into leather they are crafted into the products you in the collection by my sister-in-law, A Well Worn Story. Each item is 100% Midwest made by three small businesses that believe in continuing the values of generations past by using our resources more thoughtfully.

During sheep harvests we save the hides as well and they are turned into beautiful sheepskin rugs by an incredible group of women just 8 miles from our farm in Paoli, Wisconsin.

Wool

Once a year our flock is sheared to help our sheep stay clean and comfortable during the hot summer months. We collect this wool and have it processed into mattress pads. Our wool mattress pads are processed at a small woolen mill in Appleton Wisconsin that is still doing things the way they were done in the 1800s. Some of our wool goes to a one-woman shop in Illinois to be spun into the felting that is used for our leather + wool items.
